Whole-wheat Banana Cake




We always have overriped bananas left at home some day or the other . So usually we end up making the South Indian style Buns .But this time  I tried out something different and omg it turned out really very well. The aroma of cardamom spreads in the entire house once the cake is done whereas the richness of Almonds and Cashews take the taste to a completely different level .The recipe of Banana cake is as follows -

Ingredients:

180 gms Whole-wheat flour
8 ounces of overripe banana puree / 5-6 small overripe banana puree
1tsp cardamom powder /vanilla essence
1tsp baking powder
1/2 tsp baking soda
1/4th cup + 1tbsp oil
1/2 cup sugar
A pinch of salt
Handful of chopped Almonds , Cashews & Pistachios

Method :
In a bowl add banana puree, cardamom,oil ,sugar and beat well until the sugar melts and mixes completely.
Meanwhile sift other dry ingredients .
Add the dry ingredients to the wet mixture in parts and mix well .Add the dry fruits as well
In a greased mould pour the batter . The batter turns out very thick but don't worry it rises very well.
Decorate the batter on top with some dry fruits.
Place this in a preheated oven @180°c for 25 - 30 minutes .
Your delicious banana cake is ready!!!!




Tip :
Preheat the oven with both rods for 10 minutes.
Keep checking the cake as the time taken to bake differs from oven to oven ...so it may take more or less time accordingly.
Once the cake starts browning on the top , switch the baking mode to lower rod only .
