Mango Rasgulla with Rabdi


Prepared this mango rasgulla Rabdi . Was not sure how it would turn out but it tastes very yummy . I have even shared pictures of mango rasgulla below. So the recipe of Mango Rabdi Rasgulla is as follows :


  • For Mango Rasgulla 

  • 2to 3 mangoes pulp
  • 1/2 litre milk
  • 1cup sugar
  • 3-4 cups of water
  • 7-8 drops of lemon juice



For mango Rabdi

  •  Full cream milk - 1/2 litre
  • Sugar - 2 tbsps (adjust)
  • Mango puree - 1 cup, fresh and thick
  • Cardamom powder - 1/2 tsp
  • Cashew for garnishing



Method:

1) Make mango pulp and add it and mix nicely with milk and see that no lumps are formed Now boil this milk Now you can see that the milk starts curdling itself . Then add lemon juice to speed up this process2)Once the milk is curdled separate the cheese and wash it under running water and then with a muslin cloth hang it in order to drain the excess water for 2 to 3 minutes . Now take the cheese and knead it into a soft smooth dough the kneading must be done until the dough becomes smooth Prepare small balls out of it 3)For the syrup- Take sugar 1 cup and water 5 cups  in a pan (you can take even in the ratio 1:4depending upon your sweetness) and wait till the sugar dissolves fully once its done add the small balls prepared in the sugar syrup and let them boil for about 15 to 20 minutes . Make sure the pan is covered wit a lid 

4) For Rabdi : Boil milk till it reduces to half the quantity.

Add sugar and let it dissolve. Remove from flame and let it cool.

After it cools, add mango puree, powdered cardamom. Let it chill inside the fridge .Now
 place the rasgulla over the Rabdi and serve by garnishing with some chopped cashews
